Dill Potato Salad

I love using fresh herbs to liven up all kinds of dishes – no exception being potato salad. The dill in this recipe adds wonderful flavor and freshness. Serve this with any grilled meats or seafood. White BBQ Coleslaw

As picnic season approaches, I love having grab-and-go salads in our cooler to enjoy. I love having a variety of healthy snacks on-hand whenever I need a pick-me-up – typically mid-morning or mid-afternoon. These bars are a great balance of carbs, protein and fat and are naturally sweetened. I used almonds and dried cranberries for my add-ins, but feel free to use whatever dried fruit and nuts you have No-Bake Chocolate Almond Oat Bars

Chicken can be quite boring, but this is definitely an exception. This chicken is marinated with an abundance of flavors and baked to a beautiful golden brown. Serve this with farro, quinoa or pasta. This dish is great for a weeknight meal, but would also be great for entertaining! Pair with a crisp white wine Mediterranean Baked Chicken

Cardamom Orange Rice Pudding

Rice pudding was one of my Grandma’s favorite desserts, so I always love making it. It’s creamy and comforting and super simple to make. The cardamom adds a wonderful depth of flavor and the orange zest adds brightness.
