This dish is a wonderful meal to prep ahead for lunch or dinner. It’s a perfect combo of protein and veggies and it reheats nicely. My sauce has way less sugar than a traditional sesame chicken sauce, without sacrificing any flavor. Serve this on it’s own or over rice, quinoa or lo mein noodles.
- Preheat oven to 425.
- In a small bowl, combine tamari, honey, sesame oil, rice wine vinegar, garlic and ginger.

3. Place bell peppers and red onion on a rimmed baking sheet and toss with half of the sauce. Roast for 15 minutes.

4. Add chicken to the remaining sauce and toss to coat. Allow to marinate while the veggies roast.

5. After 15 minutes, add chicken to the sheet pan with the veggies. Sprinkle with raw cashews. Place pan back in the oven to 15 minutes longer.

6. Once out of the oven, allow the pan to rest for 5 minutes. After 5 minutes, stir the chicken mixture and scoop into bowls. Garnish with green onion.

Sesame Cashew Chicken and Peppers
Serves 4
All you need:
1/2 cup reduced-sodium (50% less sodium) tamari
2 tablespoons honey
2 tablespoons sesame oil
1 tablespoon rice wine vinegar
3 peeled garlic cloves, minced
1 (2-inch) piece fresh ginger, peeled and grated
1 red bell pepper, chopped
1 orange bell pepper, chopped
1 yellow bell pepper, chopped
1 red onion, diced
1 1/2 pounds boneless, skinless chicken breast, cut into bite-sized pieces
1 cup raw unsalted cashews
Thinly sliced green onion, for garnish
