Caramelized Pear and Gorgonzola Salad

Pears are one of my favorite fruits – juicy, sweet and slightly tart. Lightly caramelizing them in honey butter takes that delicious sweetness to the next level! Served over a bed of beautiful greens, the buttery pears, creamy gorgonzola cheese and toasty walnuts make this meal a winter delight. Serve this with crusty bread to soak up all of those flavors!

  1. Melt butter in a large skillet over medium-high heat. Add pears in a single layer and cook (without moving) for 5 minutes, or until you start to see the edge of the pears start to brown.

2. Flip the pears and turn heat off. Drizzle in the honey and season lightly with salt. Set the pears aside to cool slightly.

3. In a small bowl, combine vinaigrette ingredients.

4. Place lettuce into serving bowls and top with pears, walnuts and gorgonzola. Drizzle with vinaigrette and enjoy!

All you need:

2 semi-ripe pears, cored and sliced

2 tablespoons butter

1 tablespoon honey

Pinch kosher salt

Vinaigrette –

1/4 cup olive oil

2 tablespoons balsamic vinegar

2 teaspoons honey

1 teaspoon Dijon mustard

Pinch kosher salt

Freshly ground black pepper, to taste

1 (5 ounce) tub mixed leafy greens

1/2 cup chopped walnuts, toasted

1/4 cup crumbled gorgonzola cheese
