Cast Iron Breakfast Pizza

I love using my cast iron skillet for a variety of dishes, but pizza is one of my favorites. Breakfast pizza can be made it a variety of ways (scrambled eggs, bacon, veggies), but I decided to get a little fancy and use prosciutto since I love how it tastes when it crisps up a bit.
This pizza is super simple to make and is perfect for serving guests because it comes together so quickly. Serve this with fresh fruit salad and start your morning off right!



1. Roll dough into a 10-inch circle on a floured surface.

2. Preheat oven to 450. Place cast iron skillet in the oven to get warm.

3. Remove skillet from the oven and carefully transfer dough to the bottom of the pan. Bake dough for 5 minutes.

4. Remove skillet from the oven and brush with sauce. Cover evenly with mozzarella cheese and sprinkle with crushed red pepper and Italian seasoning. Drape prosciutto slices over the top. Crack eggs evenly onto the pizza and season with salt and pepper. Bake until the cheese is melted and the eggs are set, about 10-12 minutes.

5. Finish pizza with basil, oregano and parmesan. Drizzle with olive oil, slice and serve.

Serves 4

All you need:
1 (16 oz.) ball pizza dough
1 cup pizza sauce
8 oz. fresh mozzarella, sliced
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon Italian seasoning
4 slices thinly sliced prosciutto
4 large eggs
Salt and pepper
Fresh basil, fresh oregano and freshly grated parmesan cheese, for garnish
Olive oil, for drizzling
