Strawberry Snap Pea Crunch Salad

Strawberry Snap Pea Crunch Salad

All you need:

Honey Lemon Vinaigrette –

3 tablespoons olive oil 

Zest and juice of 1 small lemon 

1 teaspoon honey 

1/2 teaspoon Dijon mustard 

Pinch kosher salt 

Freshly ground black pepper, to taste 

2 cups sugar snap peas, thinly sliced on a bias

1 ½ cups strawberries, hulled and chopped

⅓ cup whole roasted almonds, roughly chopped

¼ cup crumbled feta cheese 

2 tablespoons chopped fresh mint leaves 

2 tablespoons thinly sliced fresh basil leaves

2 tablespoons finely diced red onion
