Coconut Almond Energy Bites

Coconut flakes and almonds are two of my favorite healthy fats to use in recipes (and they provide great flavor). There are so many different ways to make energy bites and it’s fun to play around with flavor combinations. These bites get their sweetness from dates and have a good amount of fiber thanks to the chia seed and coconut flour. Pack these in your lunch bag for an afternoon snack at work or stash them in your workout bag for the perfect post-workout treat!

1. Place dates and almond butter in a food processor and process 30 seconds, or until the dates are broken down slightly.

2. Add protein powder, coconut flour, flaxseed and chia seed and process for 30 more seconds.

3. Add vanilla, cinnamon, almond milk and salt and process until a thick dough forms. Transfer the mixture to a large bowl and add the chocolate chips.

4. Form the dough into 15 balls. Roll the balls in a small amount of water and then roll them in coconut flakes. Keep the energy bites in an airtight container in the fridge until ready to eat.

Makes 15

All you need:
8 medjool dates, pitted
1/2 cup natural almond butter
1/2 cup chocolate or vanilla protein powder
1/3 cup coconut flour
2 tablespoons ground flaxseed
2 tablespoons chia seed
2 teaspoons pure vanilla extract
1/4 teaspoon ground cinnamon
3 tablespoons unsweetened almond milk
Pinch salt
2 tablespoons dark chocolate chips (60% cacao or higher)
Unsweetened coconut flakes, for rolling

All you do:
