Herbed Farro with Grapes, Feta and Walnuts

Grain salads are one of my favorite types of dishes to prepare on days where we can eat outdoors. This salad in particular is so refreshing – the juicy grapes and fresh herbs add wonderful flavor and color. Serve this as a side dish for grilled salmon or chicken or serve as a main dish with a side of leafy greens.

  1. Rinse farro in a colander. Place in a large saucepan over high heat and toast for 1-2 minutes, or until fragrant, stirring constantly. Pour in vegetable broth (or water) and bring to a boil. Reduce heat to low, cover and cook for about 30 minutes, or until the farro is tender.

2. Meanwhile, combine olive oil, balsamic, honey, dijon, salt and pepper in a large bowl.

3. Once farro is cooked, drain and rinse with cold water. Add farro to the dressing and lightly stir. Add walnuts, feta and herbs and stir again to combine. Finally, add grapes and toss gently.

4. Place salad in a serving bowl and garnish with more feta cheese, if desired. Serve!

All you need:

1 cup farro

2 cups vegetable broth (or water)

3 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon honey

1/2 teaspoon Dijon mustard

1/4 teaspoon kosher salt

Freshly cracked black pepper, to taste

1/2 cup toasted chopped walnuts

1/3 cup crumbled feta cheese, plus more for garnish

1/4 cup fresh mint leaves, chopped

1/4 cup fresh basil leaves, chiffonade

1 cup green grapes, halved

All you do:
