Bacon, Havarti and Arugula Quiche

With Easter right around the corner, I’ve been starting to think of some tasty brunch items to include on my menu. This quiche is somewhat unique because it uses phyllo dough for the crust instead of pastry dough, providing a wonderful flaky texture. Meatballs are one of my favorite meal prep items because they are super flavorful and reheat well. These meatballs are the perfect combo of sweet, sour and spicy. Roasted Vegetable and Chickpea Stew

1. Preheat oven to 425. Place diced veggies on a large sheet pan and drizzle with olive oil. Season with salt and pepper and roast for 25 minutes, or until nicely caramelized.  2.
