Veggie Taco Pizza

Pizza and tacos are two of my absolute favorite foods (I’m sure most of you can agree). This pizza is the best of both worlds! I decided to go the vegetarian route with this one – highlighting sweet corn and tomatoes which are at their peak of freshness right now. If you can’t find queso fresco, simply substitute feta cheese.

  1. Preheat oven to 425. Lightly coat a large rimmed baking sheet with cooking spray.
  2. Roll out pizza dough and place on the prepared baking sheet. Bake dough for 8 minutes. Spread refried beans onto the par-baked dough and top with cheddar and Monterey Jack cheese. Bake for 10 minutes longer, or until the crust is golden brown and the cheese is melted.

3. Combine sour cream, salsa and fresh lime juice. Drizzle half of the creamy salsa over the pizza. Top with sweet corn, tomatoes, green onion and hot sauce and cut into squares.

4. Finish the pizza with pickled jalapeños, queso fresco, grated parmesan and fresh chopped cilantro. Drizzle with the remaining creamy salsa and serve!

All you need:

12 oz. pizza dough (homemade or store bought)

1 (16 oz.) can refried beans

1/2 cup shredded extra sharp cheddar cheese

1/2 cup shredded Monterey Jack cheese

1/2 cup sour cream

1/2 cup salsa

Juice of 1 lime

1/2 cup fresh sweet corn kernels

1 small tomato, diced

2 green onions, thinly sliced

Hot sauce, to taste

1/3 cup pickled jalapeno slices

1/2 cup queso fresco, crumbled

1/3 cup grated parmesan cheese

2 tablespoons fresh chopped cilantro

All you do:
