Baked Cod with Puttanesca Sauce

You have to love a meal that’s on the table in less than 15 minutes – especially one that’s colorful, packs nutritional value and has tons of flavor. My husband and I are big olive fans, so puttanesca sauce hits the spot. Serve this meal by itself or with a side of brown basmati rice. Baked Cod with Puttanesca Sauce

Red Curry Mussels

Mussels are one of my favorite appetizers to order if they’re on a menu. I’m not sure if it’s the mussels or the yummy broth they’re served in that I like more, but either way I’m hooked! I have a party coming up where the client wants mussels, so I decided to try out some Red Curry Mussels

Blackened Shrimp with Edamame Succotash

Since living in Iowa, I can’t get enough sweet corn. It is my favorite summer vegetable (aside from tomatoes) and when it’s in season I make sure to enjoy it as much as possible. In this recipe, I paired it with protein-packed edamame (shelled soybeans), onions and peppers to make a simple succotash. This meal Blackened Shrimp with Edamame Succotash

Prosciutto Wrapped Salmon

This meal is on the table in 20 minutes, but tastes like something you would order at a 5-star restaurant. The salty prosciutto paired with the sweet and salty mustard mixture on the salmon is an amazing balance of flavors. Serve this with a leafy green salad and prepare to wow your family and friends! Pan-Seared Mahi Mahi with Spinach Pesto

Mahi Mahi is a firm whitefish that is low in fat and packed with protein. Because of it’s firm texture, it’s great for pan-searing or grilling. Serve this dish with farro or quinoa and you have a delicious, nutrient-dense dinner. If you have any extra pesto, toss it with roasted veggies or serve with grilled Pan-Seared Mahi Mahi with Spinach Pesto
