Roasted Tomato and Bean Stew

Josh and I have been watching a lot of “Stanley Tucci: Searching for Italy” and I’ve been so inspired by their way of cooking. They use minimal ingredients in their dishes, but they use the best and freshest ingredients they can find. While we don’t have the same tomatoes they do, we do the best Roasted Tomato and Bean Stew

Vanilla Cream Scones

Spring is almost here and strawberries are looking so beautiful at the grocery store right now. Honey-Soy Salmon Rice Bowls

Rice bowls are so fun because everyone can customize their own. This crispy, salty and sweet salmon is extremely delicious and pairs nicely with the veggies and rice. It’s traditionally made from sun-dried peppers without the seeds, giving it a slightly sweet flavor. This buttery, garlicky and spicy sauce is perfect with shrimp! Serve Gochugaru Shrimp

Chopped Salad with Sesame-Miso Dressing

I love a big salad with lots of different colors, flavors and textures. This chopped salad starts with a bed of buttery lettuce, is topped with a rainbow of veggies and finished with honey roasted peanuts (my fave). The dressing is the true star here though – the combination of vinegar, sesame, honey and miso Chopped Salad with Sesame-Miso Dressing

Potato Chip Crusted Chicken Tenders

Potato chips are one of my favorite snacks (especially kettle-cooked!) and we had quite a bit leftover after this weekend’s festivities. I decided to use the chips we had left to create the perfect crunchy coating for these chicken tenders. This recipe could not be simpler, and I like the that these tenders are less Potato Chip Crusted Chicken Tenders
