Thai Cucumber Salad

To me, refreshing salads like this one define summer dining. This dish comes together quickly and is full of flavor. Serve this with salmon, chicken or lo mein noodles for delicious and nutritious meal!

  1. Combine dressing ingredients in a large bowl.

2. Add cucumbers, onion, peanuts, cilantro and mint and toss gently to combine.

3. Transfer to a serving bowl and serve immediately or cover and keep in the fridge until ready to serve.

Thai Cucumber Salad

Serves 4

All you need:

Dressing –

Zest and juice of 1 lime

1/4 cup rice vinegar

2 tablespoons sugar

1 tablespoon sesame oil

1 tablespoon fish sauce

1/2 teaspoon crushed red pepper flakes

8 mini cucumbers, peeled and sliced thin

1/2 small red onion, sliced thin

1/3 cup roasted salted peanuts, chopped

2 tablespoons chopped fresh cilantro

2 tablespoons chopped fresh mint leaves

All you do:
