Farmer’s Market Pasta

We are in full-on summer veggie mode right now. It’s a perfect time to visit your local farmer’s market and pick up sweet corn, tomatoes, bell peppers, zucchini and summer squash. Nothing beats the flavor of veggies that are locally grown. This pasta is a celebration of all those flavors and colors. Serve this on Farmer’s Market Pasta

Blueberry Buckle

Preheat oven to 350. Butter an 8×8 square cake pan. In a large bowl, cream sugar, butter, egg and lemon zest. 3. Add Greek yogurt and mix until combined. 4. Roasted Vegetable and Chickpea Stew

1. Preheat oven to 425. Place diced veggies on a large sheet pan and drizzle with olive oil. Season with salt and pepper and roast for 25 minutes, or until nicely caramelized.  2. Place the veggies in a Dutch oven or large saucepan and add diced tomatoes, tomato sauce, Italian seasoning (or fresh herbs), garlic Roasted Vegetable and Chickpea Stew

Kale Chicken Caesar Pasta Salad

1. Place dressing ingredients in a blender and process until smooth. 2. Place kale in a large bowl and toss with a small amount of dressing until lightly softened. Add cooked pasta, chicken and shredded Parmesan to the bowl. Drizzle the remaining dressing over and toss gently to combine. 3. Transfer pasta salad to a Kale Chicken Caesar Pasta Salad

Caramelized Onion Dip

Party season is here and that means lots of yummy snacks! Onion dip is a classic favorite, but making it from scratch is extra delicious.  1. Heat olive oil in a large skillet over medium heat. Fried rice is one of my favorite pantry meals. It comes together so quickly and makes great leftovers for lunch throughout the week. Shaved Asparagus Salad

As I sit here eating a whole pound of asparagus (haha) I’m reminded of what beautiful produce we are provided in west Michigan in the warmer months. The asparagus with thicker stems may not be everyone’s favorite, but in this salad they work perfectly for peeling. Serve this with grilled salmon or chicken and a side Shaved Asparagus Salad

Trying to maintain a healthy eating pattern during this time can be difficult, but I keep reminding myself to stock up on fresh veggies while I’m at the store.
