Grilled Halloumi, Watermelon and Tomato Salad

Combine salad ingredients in a small bowl. Set aside.

Preheat grill to high. Brush halloumi with olive oil on both sides. Grill the cheese for 2-3 minutes per side, or until grill marks form. Once off the grill, squeeze fresh lemon juice over.

Place arugula on a serving platter and top with cheese. Garnish with watermelon and tomatoes. Finish with sea salt.

Grilled Halloumi, Watermelon and Tomato Salad

Serves 4

All you need:

Salad

1 cup small diced watermelon

1 cup small diced tomato (I used heirloom tomatoes)

1 tablespoon chopped fresh mint

2 tablespoons olive oil

1 tablespoon white balsamic vinegar (or white wine vinegar)

1 teaspoon honey

Juice of ½ lemon

Salt and freshly cracked black pepper, to taste

Olive oil, for brushing

1 pound halloumi cheese, sliced into 4 equally sized squares

Juice of ½ lemon

4 cups arugula

Coarse sea salt, for sprinkling on top
