Veggie-Loaded Turkey Sloppy Joes

If you grew up eating sloppy joes like I did, you know the process – ground beef, canned sloppy joe sauce and white bun. While still tasty, that meal didn’t provide many health benefits. This version is more flavorful and full of lean protein and veggies. I like serving mine on sprouted grain bread, but this would also be great served over baked potatoes or sweet potato fries.

1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook until no longer pink. Transfer to a bowl.

2. Add garlic, green onion, bell peppers and carrot and cook for 2 minutes longer. Add turkey back to the pan along with the remaining sloppy joe ingredients. Turn heat to low, cover and keep warm.

3. Add a thin layer of olive oil to a separate skillet and turn heat to medium-high. Once the oil is hot, cook the bread (in batches, adding more oil as needed) until golden brown on both sides.

4. Transfer bread to serving plates and spoon sloppy joe mixture over. Top with pickles and serve.



Veggie-Loaded Turkey Sloppy Joes
Serves 4

All you need:
1 tablespoon olive oil
1 pound lean ground turkey
3 garlic cloves, minced
5 green onions, thinly sliced
1 yellow bell pepper, diced
1 green bell pepper, diced
1 cup shredded carrots
1 can fire-roasted tomatoes, with juice
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 teaspoon red wine vinegar
1 teaspoon honey
1/2 teaspoon salt
1/4 cup chopped flat-leaf parsley

Olive oil, for frying
4 slices sprouted grain bread

Dill pickle slices, for garnish

All you do:
