
As we go into the new year, I want to continue my focus on wholesome cooking with big flavor. Hot honey has been mentioned recently in the product development world as a trendy ingredient and I’m so on board with that! The roasted sweet potatoes add the perfect sweetness to balance the salty veggie chorizo crumbles. The cottage cheese adds tang and the avocado adds creaminess. The hot honey rounds out all of those flavors beautifully. Serve this for breakfast, lunch or dinner for a protein and fiber boost!
- Preheat oven to 450 degrees. Line a rimmed baking sheet with parchment paper.
- Place cubed sweet potatoes on top and drizzle with 1 tablespoon olive oil. Season with salt, cinnamon and freshly ground black pepper, to taste. Toss to coat. Roast for 20 minutes.

3. Meanwhile, heat the remaining tablespoon of olive oil in a skillet over medium-high heat. Add veggie chorizo crumbles and cook until warmed through. Add tomato paste and stir to combine. Cover pan and keep warm over low heat.


4. Scoop 1/2 cup cottage cheese into each serving bowl. Add roasted sweet potatoes, veggie chorizo mixture and diced avocado. Drizzle everything with hot honey and enjoy!

Veggie Chorizo Protein Bowls with Hot Honey
Serves 4
All you need:
3 medium sweet potatoes, cubed
2 tablespoons olive oil, divided
1/2 teaspoon kosher salt
1/4 teaspoon ground cinnamon
Freshly ground black pepper, to taste
1 (10 ounce) bag frozen veggie chorizo crumbles
1 tablespoon tomato paste
2 cups cottage cheese
1 ripe avocado, pitted and cubed
Hot honey, for drizzling on top
All you do:
