Vanilla Pumpkin Overnight Oats

I think most of us can relate to having hectic mornings where a healthy breakfast can be difficult to have ready to go. These overnight oats are a great solution! Not only do they taste amazing, but they are heart-healthy and packed with protein to get you through to lunch time.

1. Combine the oats, chia seeds, ground flaxseed and salt in a large mixing bowl.

2.
In a separate mixing bowl, whisk the almond milk, pumpkin pie spice,
cinnamon, vanilla, Greek yogurt and pumpkin together until smooth. Add
to the dry ingredients and stir to combine.

3.
Add the pecans, coconut flakes and pumpkin seeds and stir until
thoroughly mixed. Transfer the mixture to small mason jars (optional)
and place in the fridge overnight. (Oats will last up to 5 days in the
fridge.) Garnish with additional pecans and pumpkin seeds and drizzle with maple syrup, if desired.
