Tortellini are one of my absolute go-to ingredients when I want to prepare a quick meal. This dish is perfect served as an entree or as a side for grilled chicken, salmon or sausage. So delicious – and makes great leftovers too!
- Bring a large pot of lightly salted water to a boil. Add tortellini and cook according to package instructions; drain.
2. Meanwhile, combine vinaigrette ingredients in a large bowl. Add sundried tomatoes and stir to combine.
3. Add spinach and warm tortellini and stir gently to combine. Add shaved parmesan and stir again until everything is lightly coated with vinaigrette. Serve!
Tortellini, Spinach and Sundried Tomatoes with Parmesan-Balsamic Vinaigrette
Serves 4 (entree) or 6 (side dish)
All you need:
1 (9 oz) package cheese tortellini
Vinaigrette –
1/3 cup olive oil
3 tablespoons balsamic vinegar
2 tablespoons grated parmesan cheese
2 teaspoons Dijon mustard
1/4 teaspoon garlic powder
1/4 teaspoon Italian seasoning
1/4 teaspoon kosher salt
Freshly ground black pepper, to taste
1 (3 oz) package julienne-cut sundried tomatoes
1 (5 oz) package baby spinach
1/2 cup shaved parmesan cheese
All you do:
