BBQ Chicken Pizza

After a hectic few weeks, I was excited to finally get back into the kitchen today! Normally when I make pizza I’ll use flatbread, but today I decided to make the crust from scratch (and it’s still so simple). This delicious combination of fresh dough, salty cheese, sweet pineapple and hot pickled vegetables is so addictive it’s hard to eat just one piece. I used Cookie’s Western Style BBQ sauce because it’s my favorite, but any sweeter BBQ sauce works well here. A bonus is that this dinner is on the table in less than 30 minutes. Enjoy!

1. Preheat oven to 450.
2. Combine yeast and sugar in a large mixing bowl. Let sit for 10 minutes.

3. Stir in flour, salt and olive oil. Knead in the bowl for 3-5 minutes, or until the dough is nice and soft.

4. Transfer dough to a lightly greased pizza pan or baking sheet. Top with BBQ sauce, mozzarella cheese, chicken, pineapple, onion, giardiniera and Monterey Jack cheese. Bake for 15-20 minutes, or until cheese and crust are golden brown.

5. Finish pizza with flat-leaf parsley and olive oil. Let sit for 5 minutes before slicing.

Sweet ‘n Spicy BBQ Chicken Pizza
Serves 6

All you need:
Pizza crust
1 (.25 oz.) package dry active yeast
1 teaspoon sugar
1 cup warm water
2 1/2 cups bread flour
2 tablespoons olive oil
1 teaspoon salt

3/4 cup bbq sauce
1 pound cooked boneless, skinless chicken breast, diced small
1/2 cup shredded mozzarella cheese
1/2 cup diced fresh pineapple
1/4 red onion, thinly sliced
1/4 cup hot pickled giardiniera
1/2 cup shredded Monterey Jack cheese
1/4 bunch flat-leaf parsley
Olive oil, for drizzling

All you do:
