Sweet Corn and Basil Grain Salad

Grain salads are a wonderful lunch or side dish option. This salad is so flavorful and has a wide variety of colors and textures. The fresh herbs and creamy goat cheese really tie the whole dish together! This is really a complete meal on its own, but you could also serve this with grilled meat, seafood or vegetables.

  1. Preheat oven to 450 and line a large rimmed baking sheet with parchment paper. Place garbanzo beans and sweet corn on the baking sheet and toss with 1 tablespoon olive oil and 1/2 teaspoon salt. Roast for 20 minutes.

2. Meanwhile, place vinaigrette ingredients in a large mixing bowl and whisk to combine.

3. Add cooked wheat berries (or farro), almonds, basil, raisins, red onion, parsley, goat cheese and roasted garbanzo beans/sweet corn. Stir gently to combine.

4. Transfer salad to a serving dish and garnish with more fresh basil and goat cheese, if desired. Serve immediately or keep cold until ready to serve.

All you need:

1 (15 oz.) can garbanzo beans, drained and rinsed

3 ears sweet corn, husked

1 tablespoon olive oil

1/2 teaspoon salt

Vinaigrette –

2 tablespoons white wine vinegar

2 tablespoons olive oil

2 garlic cloves, minced

Zest of 1 lemon

1 teaspoon honey

1/2 teaspoon salt

Freshly ground black pepper, to taste

2 1/2 cups cooked wheat berries (or farro), from 1 cup uncooked

1/2 cup toasted sliced almonds

1/2 cup thinly sliced fresh basil leaves (plus more for garnish)

1/3 cup golden raisins

1/3 cup small diced red onion

1/4 cup chopped flat-leaf parsley leaves

2 oz. plain goat cheese, crumbled (plus more for garnish)
