
As a sweet and spicy fanatic, this salad hit all the right notes. The sweet melon, salty feta, crunchy pepitas, fresh serrano chiles, and cilantro balance one another so beautifully. This salad pairs well with shrimp, salmon, chicken, or tacos, making it an incredible summer side dish!
- In a small bowl, whisk together olive oil, lime zest and juice, honey, salt, and a few grinds of black pepper.

2. Place watermelon in a large mixing bowl. Add feta, Serrano slices, cilantro, and pumpkin seeds.

3. Drizzle with the dressing and gently toss to combine.


4. Chill for 10–15 minutes before serving, or serve immediately.

Zest and juice of 1 lime
2 tablespoons extra-virgin olive oil
1 teaspoon honey
1/2 teaspoon sea salt
Freshly ground black pepper, to taste
1 mini seedless watermelon, cubed
2 ounces crumbled feta cheese
1 Serrano chile (or 2 if you like more heat), very thinly sliced
1/4 cup roughly chopped fresh cilantro
1/3 cup roasted salted pumpkin seeds (pepitas)
