Switch up your normal stir-fry routine with this easy Spicy Ginger Pork Stir-Fry recipe! Made with ground pork, sweet mini bell peppers and shelled edamame and coated in a simple soy and chili crisp sauce, this dish is delicious and ready in under 10 minutes. I like to serve mine with rice noodles or jasmine rice, but you could also use this was a filling for lettuce wraps.
- Combine sauce ingredients in a small bowl.
2. Heat 1 teaspoon coconut oil in a large skillet over medium-high heat. Once hot, add ground pork and cook until browned and crumbly. Transfer to a bowl.
3. Add the remaining teaspoon of coconut oil to the pan along with the onion and garlic; cook for 2 minutes, stirring occasionally. Add ginger, peppers and edamame and cook for 2 minutes longer.
4. Add the sauce and cooked ground pork to the skillet and stir to combine; cook for a few minutes longer to warm through and enjoy!

All you need:
Sauce –
2 tablespoons reduced sodium tamari (or soy sauce)
1 tablespoon mirin
2 teaspoons chili crisp oil
2 teaspoons honey
2 teaspoons coconut oil, divided (or vegetable oil)
1 pound ground pork
1 small yellow onion, diced
3 peeled garlic cloves, finely chopped
1 teaspoon grated fresh ginger
6 mini sweet bell peppers, sliced
1 (8 ounce) bag frozen shelled edamame
All you do:
