Roasted Beets with Fresh Herbs and Feta

With the holidays right around the corner, I like to start thinking of new side dish ideas to bring to the table for gatherings with friends and family. Beets are one of my favorite veggies and I love them roasted or pickled. In this recipe I combine roasted beets with a simple citrus vinaigrette, fresh herbs and salty feta for the perfect bite. This dish is a great compliment to red meats, pork tenderloin or salmon.

  1. Preheat oven to 450. Line a large rimmed baking sheet with parchment paper.
  2. Combine beets, olive oil, salt and pepper in a large bowl. Spread beets in an even layer on the baking sheet and roast for 25-30 minutes, or until tender.

3. Whisk vinaigrette ingredients together in a small bowl.

4. Place roasted beets back in the large bowl and drizzle with vinaigrette. Add basil, mint, parsley and feta and stir to combine.

5. Transfer salad to a serving dish and garnish with more feta.

Serves 4

All you need:

4 medium beets, peeled and diced

1 tablespoon olive oil

1 teaspoon kosher salt

1/4 teaspoon black pepper

Vinaigrette –

2 tablespoons olive oil

1 tablespoon white wine vinegar

2 teaspoons honey

Zest of 1 orange

Zest of 1 lemon

Pinch salt

1 tablespoon chopped fresh basil

1 tablespoon chopped fresh mint

1 tablespoon chopped fresh parsley

1/2 cup crumbled feta cheese, plus more for garnish

All you do:
