Rainbow Veggie Turkey Wraps with Red Pepper Aioli

  1. Combine red pepper aioli ingredients in a food processor.

2. Spread aioli evenly onto each wrap. Top with lettuce, turkey, cucumbers, carrots, bell peppers and feta.

3. Wrap up burrito-style. If enjoying right away, cut in half and serve. If prepping ahead, cover each wrap tightly with plastic wrap and store in an airtight container in the fridge until ready to enjoy. Will keep in the fridge for up to 4 days.

All you need:

Red Pepper Aioli –

1/2 cup mayo

1 jarred roasted red pepper, drained well

1 peeled garlic clove

Juice of 1/2 lemon

1/4 teaspoon smoked paprika

1/4 teaspoon kosher salt

Freshly ground black pepper, to taste

4 large tortillas (whole wheat or regular)

4 ounces green leaf lettuce

1 pound sliced turkey breast

1/2 English cucumber, sliced thin

1/2 cup shredded carrots

8 mini bell peppers, sliced thin

1/2 cup crumbled feta cheese

All you do:

  1. Combine red pepper aioli ingredients in a food processor.
