Potato Chip Crusted Chicken Tenders

Potato chips are one of my favorite snacks (especially kettle-cooked!) and we had quite a bit leftover after this weekend’s festivities. I decided to use the chips we had left to create the perfect crunchy coating for these chicken tenders. This recipe could not be simpler, and I like the that these tenders are less greasy since they are baked instead of fried. Serve these with a leafy green salad or roasted broccoli.

  1. Preheat oven to 450. Line a rimmed baking sheet with foil and place a wire rack on top. Lightly coat the rack with nonstick spray and set pan aside.
  2. Beat eggs in a shallow bowl and add buttermilk, hot sauce and salt. Add chicken and toss until the tenders are well coated.

3. In a separate bowl, combine the crushed potato chips and spices. Coat each chicken tender in the potato chip mixture and place on the prepared wire rack. Bake for 20 minutes, or until the chicken is cooked through.

4. Meanwhile, combine honey mustard ingredients in a small bowl.

5. Place chicken tenders onto serving plates with honey mustard on the side for dipping.

Serves 4

All you need:

2 eggs

1/2 cup buttermilk

1 teaspoon hot sauce

1/2 teaspoon salt

1 1/2 pounds boneless, skinless chicken breast, cut into strips

4 cups potato chips, crushed

1/2 teaspoon paprika

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

Honey mustard –

1/2 cup mayo

1/4 cup grainy mustard

2 tablespoons Dijon mustard

2 tablespoons honey

1/4 teaspoon cayenne pepper

All you do:

  5. Place chicken tenders onto serving plates with honey mustard on the side for dipping.
