Peanut Butter Chickpea Blondies

Blondies are like a brownie, but they taste like a chocolate chip cookie since they’re made with vanilla instead of cocoa. These types of desserts can be very high carb, so I decided why not make a bar that tastes exactly the same but contains health benefits? I’m telling you, these are delish! Super peanut butter-y, light and fluffy – this dessert is one you can enjoy every day and still feel good about it.





1. Preheat oven to 350 degrees. Coat a 13×9 pan with cooking spray and set aside.
2. Combine all the ingredients except for the chocolate chips and sea salt in a food processor until smooth. Transfer the batter to a mixing bowl and fold in the chocolate chips.

3. Spread the batter evenly into the prepared pan and bake for 25 minutes.

4. Let the blondies cool slightly, then sprinkle with sea salt (if using) and cut into squares.

Makes 18 blondies

All you need:
Olive oil cooking spray
2 (15 oz.) cans garbanzo beans, drained and rinsed
1 cup natural peanut butter (no salt or sugar added)
1/2 cup pure maple syrup
2 eggs, beaten
1 tablespoon vanilla extract
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup extra dark chocolate chips
Coarse sea salt, for sprinkling (optional)
