Citrus season is in full swing and I love all the juicy oranges and grapefruits available at the store right now. The sweet orange and maple flavor of this walnut topping is the perfect compliment to the fatty salmon. This pairs nicely with salad greens tossed with balsamic vinegar and olive oil or wild rice. Yum!!
- Preheat oven to 400.
- Place salmon filets in a baking dish. Season with salt and pepper.
3. In a mixing bowl, combine maple syrup, orange zest/juice, Dijon, paprika, ginger and cayenne. Stir in walnuts.
4. Spoon walnut mixture over the salmon. Bake for 20 minutes, or until the salmon flakes easily with a fork.
5. Once out of the oven, allow the salmon to rest for 5 minutes. Garnish with parsley and serve!
Orange-Maple Walnut Crusted Salmon
Serves 4
All you need:
1 1/2 pounds salmon, cut into 4 filets and skin removed
1/4 teaspoon kosher salt
Freshly ground black pepper
1/4 cup pure maple syrup
Zest and juice of 1 orange
2 tablespoons Dijon mustard
1 teaspoon paprika
1/2 teaspoon ground ginger
Pinch cayenne pepper
3/4 cup finely chopped walnuts
Chopped parsley, for garnish
