No-Bake Salted Cashew Butter Cookies with Dark Chocolate Drizzle

If you offer me any combination of nut butter and chocolate, I’m in. These cookies are full of heart-healthy fats and natural sweetness. Pack one in your lunch for an afternoon treat or enjoy one for dessert with a glass of red wine. If you can’t find cashew butter, any nut butter will do as long as it’s creamy.

1. Line two baking sheets with wax paper.
2. Place cashew butter, maple syrup and salt in a saucepan and whisk over medium heat until it starts to bubble.

 

3. Add oats and stir to combine. Scoop dough onto the prepared baking sheets.

 

 

4. Melt chocolate in the microwave for 1-2 minutes, stirring halfway through. Use a fork to drizzle chocolate over the cookies.

 

5. Chill cookies in the freezer for 20 minutes, or until completely firm. Enjoy immediately or store in an airtight container in the fridge until ready to eat.

All you need:
1 1/2 cups cashew butter
1 cup pure maple syrup
1 teaspoon coarse sea salt
3 cups rolled oats
1/2 cup dark chocolate chips
