No-Bake Cocoa Cranberry Energy Bites

 Holiday baking is underway! While I have fond memories of baking Christmas cookies with my family, I don’t crave those as much anymore because they’re SO sweet (sugar cookies with loads of frosting…). These energy bites are lower in sugar and filled with good-for-you ingredients like fresh cranberries and cocoa. Have these for breakfast, dessert or a snack and enjoy the flavors of the holiday season with a little less guilt.

 1. Place cranberries in a food processor and pulse until finely ground. 

2. Add almonds and coconut oil and process for 30 seconds.

Add cocoa powder, oats, vanilla and honey and process until mixture
forms a soft dough. (Add 2-3 tablespoons water if needed.)

4. Transfer mixture to a bowl and refrigerate for 1 hour. 

5. Roll mixture into balls (about 2 tablespoons each) and roll in the coconut. Store in the fridge until ready to serve.

Makes 15

All you need:
1 cup fresh cranberries, frozen
1 cup honey roasted almonds
2 tablespoons coconut oil, melted
1/2 cup cocoa powder
1 cup oats
1 teaspoon vanilla extract
1/3 cup honey
Flaked coconut, for rolling

All you do:
