Chicken can be quite boring, but this is definitely an exception. This chicken is marinated with an abundance of flavors and baked to a beautiful golden brown. Serve this with farro, quinoa or pasta. This dish is great for a weeknight meal, but would also be great for entertaining! Pair with a crisp white wine or rose.
- Place chicken in a baking dish. Combine marinade ingredients and pour over the chicken. Cover and marinate in the fridge for at least 4 hours (preferably overnight).
2. Preheat oven to 400. Remove chicken from the fridge 30 minutes before ready to cook. Bake chicken, uncovered, for 30 minutes. Lower oven temperature to 350 and continue to cook for 20 minutes longer, or until the chicken registers 165 degrees.
3. Tent the chicken with foil and allow to rest for at least 10 minutes. Spoon pan juices over the chicken, garnish with parsley and serve.

1/4 cup olive oil
1/4 cup red wine vinegar
1/2 cup pitted dates, halved
1/2 cup pitted green olives, halved
1/4 cup capers
2 bay leaves
4 peeled garlic cloves, chopped
1 tablespoon dried oregano
1 teaspoon salt
1/4 teaspoon black pepper
1/2 cup white wine
1/4 cup honey
2 tablespoons chopped parsley, plus more for garnish
1 1/2 pounds bone-in, skin-on chicken drumsticks
1 1/2 pounds bone-in, skin-on chicken thighs
