1. Preheat oven to 375. Coat a baking sheet with cooking spray.

Place grated kohlrabi and zucchini in a mixing bowl and add a small
pinch of salt. Let sit a few minutes, then squeeze the moisture out.
3. Add the remaining ingredients and stir to combine. Use a small scoop to form the mixture into 4 patties.

Heat a nonstick skillet over medium heat and coat with cooking spray.
When the pan is hot, gently add 1-2 patties (depending on the size of
your pan), cook for 1 minute per side then transfer to the prepared
baking sheet. Repeat with the remaining patties.

Bake for 10 minutes, or until the fritters are cooked through. While
they bake, combine the feta yogurt ingredients in a small bowl.
6. Transfer the fritters to a plate, garnish with feta yogurt and serve.

2 tablespoons crumbled feta cheese
1 tablespoon mayo
1/2 teaspoon dried parsley
