I love hummus – it’s so hearty and adds a wonderful burst of lemony, garlicky flavor with each bite. Using it as the base of this dish is the perfect way for it to soak up the other flavors from the meat, tomatoes, olive oil and pine nuts. Overall, it’s absolutely delicious – a nice blend of sweet, salty and spicy. I chose ground bison because I like how lean it is and I enjoy the flavor, but you can easily swap in lean ground beef for the bison if you can’t find it at your local store. To add another element of flavor, you could also crumble feta on top.
- Combine ground bison and spices.
3. Heat olive oil in a large skillet over medium-high heat. Add ground meat mixture and cook until nicely browned, stirring occasionally, about 5 minutes.
4. Scoop hummus into 4 bowls and spread out to form a circle. Top with cooked meat, tomatoes, pine nuts and parsley. Drizzle with olive oil. Enjoy with pita chips, pita bread, crackers or veggies!
Ground Bison Hummus Bowls
Serves 4
All you need:
1 pound ground bison (or lean ground beef)
1 teaspoon ground coriander
1 teaspoon garlic powder
1/2 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1/4 teaspoon crushed red pepper flakes
Freshly ground black pepper, to taste
1 tablespoon olive oil
1 (10 ounce) container hummus (or make one of my favorite hummus recipes here)
Cherry tomatoes, fresh parsley, toasted pine nuts, for garnish
All you do:
