Grilled Pork Tenderloin with Fresh Plum Salsa

There’s something magical about late summer/early fall dinners that balance sweet and savory. This pork and plum salsa combo is exactly that. Juicy, smoky pork meets bright, tangy plums tossed with jalapeno, cilantro, honey and fresh lime juice. It’s the kind of recipe that’s perfect for a weeknight – simply pair with quinoa or brown rice and you have a wholesome, filling meal!

  1. Preheat oven to 400.
  2. Make the salsa: In a medium bowl, combine plums, onion, jalapeno, cilantro, lime juice, honey and salt. Set aside to allow the flavors to meld.

3. Rub the pork tenderloins with olive oil and season with smoked paprika, garlic powder, salt and pepper.

4. Preheat a grill pan over medium-high heat. When hot, place pork tenderloins on the pan and grill for 2 minutes per side. Transfer pan to the oven and roast for 15 minutes longer (or until internal temperature reaches 145 degrees).

5. Transfer pork to a cutting board and rest for at least 5 minutes before slicing.

6. Place pork on serving plates and spoon plum salsa over. Enjoy!

Salsa –

4 ripe plums, diced

1/2 small red onion, finely diced

1 small jalapeno, seeded and minced

2 tablespoons chopped fresh cilantro

Juice of 1 lime

1 teaspoon honey

Pinch kosher salt

Pork –

2 (approximately 1 pound) pork tenderloins, trimmed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon kosher salt

Freshly ground black pepper

All you do:
