Grilled Hawaiian Pizza

It’s grilling season (kind of!). I knew that the second the temp reached 50 degrees that I would instantly roll out my Weber.

One of my favorite desserts is grilled pineapple – it’s sweet and smoky flavor is irresistible. While great on it’s own, I figured this delicious fruit would also make a great pizza topping. This pizza is slathered with a homemade honey chipotle bbq sauce that pairs perfectly with the salty monterey jack cheese and Canadian bacon. Finish with a fresh cilantro and you’ve got a meal in literally minutes!

This meal cost me $13.18 and took me 15 minutes to prepare. 

1. Preheat your grill (medium heat is best).
2.  Heat olive oil in a large skillet over medium-high heat. Add onion and garlic and cook until softened, about 3 minutes.

3. Add ketchup, brown sugar, honey, chipotle peppers, vinegar, salt and pepper and stir to combine. Simmer for 3 minutes longer and remove from heat.

4. Carefully pour sauce mixture into a blender and process for 30 seconds, or until smooth. Transfer to a bowl.

5. Grill pineapple slices for 4 minutes per side and transfer to a plate to cool. Slice into pieces.

6. Top each flatbread with sauce, cheese, Canadian bacon and pineapple.

7. Place flatbreads on the grill and cook for 3-4 minutes per side, or until crust is slightly crisp and the cheese is melted.

8. Cut pizza into slices and garnish with fresh cilantro.

Serves 4
All you need:
BBQ sauce
1 tablespoon olive oil
1 small yellow onion, diced
3 garlic cloves, minced
1/2 cup ketchup
1/4 cup brown sugar
1/4 cup honey
2 chipotle peppers in adobo sauce, chopped
2 teaspoons apple cider vinegar 
1/4 teaspoon salt
Pinch of black pepper
1/2 fresh pineapple, cored and sliced into 4 pieces
4 Stonefire whole grain naan flatbreads
8 oz. shredded monterey jack cheese
1 (3.5 oz.) package Canadian bacon slices 
Chopped fresh cilantro, for garnish (optional)
