Grapefruit and Avocado Salad with Cara Cara Orange Vinaigrette

Citrus fruit helps to brighten up these cold, dreary days. This salad celebrates those fresh flavors! Serve this salad as is or top it with pan-seared salmon or chicken for an extra protein boost.

1. Place the vinaigrette ingredients in small bowl and whisk to combine.

 

2. Place spinach in a large bowl and toss with 1/2 of the vinaigrette. Transfer spinach to a platter.

3. Top spinach with grapefruit, avocado and walnuts. Serve the remaining vinaigrette on the side.




Grapefruit and Avocado Salad with Cara Cara Orange Vinaigrette
Serves 4

All you need:
Vinaigrette
1 garlic clove, minced
2 teaspoons honey
1 teaspoon Dijon mustard
Zest and juice of 1 Cara Cara orange (or navel orange)
2 tablespoons white wine vinegar
1/4 cup olive oil
Salt and freshly cracked black pepper, to taste

10 oz. baby spinach
1 grapefruit, peeled and sliced
1 ripe avocado, peeled, pitted and cubed
1/2 cup toasted walnut halves

All you do:
