Garlicky White Bean Puree

If you’re looking for an appetizer or side dish that is super simple, cozy and seriously delicious, this garlicky white bean puree has you covered. It’s creamy, full of flavor and comes together with just a few basic ingredients – most of which you probably already have in your kitchen. This is perfect served as a spread, dip or side dish for roasted veggies or grilled meat or seafood. Once you try it, you’ll want to keep a batch in the fridge at all times.

  1. Melt butter and olive oil in a large skillet over medium heat. Add garlic and saute until fragrant, about 2-3 minutes.

2. Add beans, broth, oregano, onion powder, salt and pepper and simmer over medium-high heat until the broth is reduced by half, about 5 minutes.

3. Mash the mixture with a potato masher until creamy (if you want it extra smooth, you can transfer it to a food processor and process until creamy).

4. Stir in parmesan until melted. Transfer mixture to a serving dish and garnish with parsley, olive oil and more freshly grated parmesan.

Serves 4 (side dish) or 8 (appetizer)

2 tablespoons butter

2 tablespoons olive oil, plus more for garnish

3 peeled garlic cloves, finely chopped

2 (15 ounce) cans cannellini beans, drained and rinsed

1 cup vegetable broth (or chicken broth)

1/2 teaspoon dried oregano

1/2 teaspoon onion powder

Pinch salt

Freshly ground black pepper, to taste

1/2 cup freshly grated parmesan cheese, plus more for garnish

Chopped flat-leaf parsley, for garnish

All you do:
