Fresh garden tomatoes are wonderful this time of year – so sweet and juicy! One of my coworkers gave me some tomato and pepper plants a few months back and now they are finally ready to enjoy. Feel free to mix up the veggies based on what you have growing in your garden! Use this salsa as a dip with tortilla chips or serve it as a garnish over grilled fish or chicken for the perfect summer meal.
- Place the diced veggies, sliced green onion and minced garlic in a mixing bowl. Add fresh lime juice, salt and pepper and stir gently to combine.
2. Transfer salsa to a serving dish. If making ahead, place salsa in an airtight container and keep in the fridge until ready to serve.
Fresh Garden Salsa
Makes 2 cups
All you need:
2-3 garden fresh tomatoes, diced small
1 bell pepper (green or red), diced small
1 banana pepper, diced small
1-2 hot peppers, seeded and diced small
4 green onions, sliced thin
4 peeled garlic cloves, minced
Juice of 1 lime
1/2 teaspoon salt
Freshly ground black pepper, to taste
All you do:
