Flank Steak with Citrus Salsa and Avocado

All of the citrus I used for this dish was perfectly sweet – I love this time of year for that reason. The smoky flank steak pairs beautifully with the tangy citrus salsa and creamy avocado. Serve this with warm flour tortillas or with quinoa. It’s a delicious, light and refreshing meal that tastes like sunshine!

  1. Combine citrus marinade in a small bowl. Place steak in a shallow dish and pour marinade over. Cover and refrigerate for 6-8 hours to allow the flavors to marry.

2. Remove steak from the refrigerator 20 minutes before cooking. While it comes to room temp, combine salsa ingredients in a small bowl and set aside.

3. Heat a grill pan over medium-high heat and lightly coat with oil or nonstick spray. Add flank steak to the hot pan and cook for 4-5 minutes; flip and continue to cook for 4-5 minutes longer (for medium-rare).

4. Remove from pan and place on a cutting board to rest for 5 minutes. Slice (against the grain) and place on a serving platter.

5. Top steak with citrus salsa and avocado.

Serves 3-4

All you need:

Citrus Marinade –

2 tablespoons olive oil

Zest and juice of 1 orange

Zest and juice of 1 lime

2 tablespoons chopped fresh cilantro

3 peeled garlic cloves, finely chopped

2 teaspoons chili powder

1 teaspoon smoked paprika

1/2 teaspoon salt

Freshly ground black pepper, to taste

1 (1.5 pound) flank steak, excess fat trimmed

Citrus Salsa –

1/2 small red onion, finely chopped

Juice of 1 lime

1 tablespoon olive oil

1/4 teaspoon salt

Freshly ground black pepper, to taste

3 oranges, peeled and sectioned

1 grapefruit, peeled and sectioned

1 tablespoon chopped fresh cilantro

1 ripe avocado, cubed
