This salad is so simple and the flavors are so fresh and inviting. The sweet, crisp apple and fennel, buttery parmesan and pistachios and crunchy kale and cabbage combine perfectly with the citrus vinaigrette. Serve this on it’s own or topped with grilled salmon or chicken for a delicious and healthy meal.
- Whisk the vinaigrette ingredients together in a small bowl.
2. Add kale to a large mixing bowl and drizzle with 2 tablespoons of vinaigrette. Massage for 30 seconds with your (clean!) hands or with tongs to soften the leaves.
3. Add cabbage, fennel, fennel fronds and apple and toss to combine.
4. Add pistachios and parmesan and another 2 tablespoons of vinaigrette and toss again to combine.
5. Transfer salad to serving dishes. Serve remaining vinaigrette on the side.
Fall Harvest Kale Apple Salad with Lemon Vinaigrette

All you need:
Vinaigrette –
1/3 cup olive oil
Juice of 1 lemon
2 tablespoons white wine vinegar
1/4 teaspoon kosher salt
2 bunches lacinato kale, thinly sliced
1 cup thinly sliced red cabbage
1 small fennel bulb, cored and sliced
2 tablespoons fennel fronds
1 small apple, sliced thin
1/2 cup coarsely chopped roasted salted pistachios
1/3 cup shaved Parmesan cheese
All you do:
