Edamame Cashew Slaw with Spicy Peanut Dressing

This slaw has a satisfying crunch and the dressing provides a delicious balance of sweet, salty and spicy flavor. Serve this by itself or pair it with seared ahi tuna for even more of a protein punch. What I also love most about this dish is that it’s on the table in less than 5 minutes!

  1. Combine dressing ingredients in a large mixing bowl.

2. Add slaw veggies, edamame, cashews, green onion and cilantro. Toss gently to combine.

3. Enjoy immediately. If not eating right away, keep dressing separate and toss with the slaw mixture right before serving.

Edamame Cashew Slaw with Spicy Peanut Dressing

Serves 6

All you need:

Dressing –

3 tablespoons natural creamy or crunchy peanut butter

2 tablespoons rice vinegar

2 tablespoons pure maple syrup

1 tablespoon toasted sesame oil

2 tablespoons reduced sodium tamari (or soy sauce)

1 (2-inch) piece fresh ginger, peeled and grated

2 peeled garlic cloves, minced

1-2 teaspoons sriracha (more or less, to taste)

2 tablespoons warm water

1 (14 oz) bag tri-color coleslaw

1 (10 oz) bag frozen shelled edamame, thawed

1 cup lightly salted whole roasted cashews

2 green onions, sliced

2 tablespoons chopped fresh cilantro

All you do:

  1. Combine dressing ingredients in a large mixing bowl.
