1. Combine dressing ingredients in a food processor or blender until smooth. Adjust seasonings as needed and set aside.
2. Place kale in a large mixing bowl. Pour 1/2 dressing over the kale and massage with your (clean!) hands for 1 minute.
3. Add the carrot, edamame, cashews, raisins and remaining dressing and toss to coat. Serve immediately.
Edamame Cashew Salad with Honey-Tahini Dressing
Serves 4
All you need:
Dressing
1/4 cup tahini
Juice of 1 lemon
2 tablespoons honey
1 teaspoon apple cider vinegar
2 garlic cloves, peeled
1/4 bunch fresh parsley
1/3 cup water
Salt and pepper, to taste
1 large bunch kale, torn into small pieces
1 1/2 cups shelled edamame
1 cup shredded carrots
1 cup roasted salted cashews
1/2 cup golden raisins
