Dark Chocolate Strawberry Chia Seed Pudding

This fiber-rich strawberry chia seed pudding is the kind of treat that feels indulgent, but still loves you back. Creamy and topped with a thin layer of dark chocolate and a crunchy freeze-dried strawberry sprinkle, it’s perfect for Valentine’s Day breakfast, dessert or snack time. Simple ingredients, beautiful layers, and just the right amount of rich dark chocolate to make this one a repeat-worthy favorite!

  1. Process strawberries, milk, yogurt, vanilla and maple syrup in a blender until smooth. Transfer to a bowl. 

2. Add chia seeds and stir to combine. Ladle or pour into serving dishes and refrigerate for at least 1 hour. 

3. Melt chocolate chips and coconut oil together. Drizzle evenly onto the top of each pudding. Sprinkle with freeze-dried strawberries. 

4. Keep refrigerated until ready to serve.

Serves 4

All you need:

1 pound fresh strawberries, hulled and sliced

1 cup milk (any variety)

1 cup plain Greek yogurt

1 teaspoon pure vanilla extract

1/4 cup pure maple syrup

1/2 cup chia seeds

1/2 cup dark chocolate chips

1 teaspoon coconut oil

Crushed freeze-dried strawberries, for garnish

All you do:
