Dark Chocolate Buckwheat Granola

Buckwheat is one of my favorite grains to add to granola because it provides the perfect, nutty crunch. This fiber-full granola is a crave-worthy blend of buckwheat groats, oats, almonds, coconut and dark chocolate chips. Serve over yogurt with fresh fruit for a delicious start to your day!

  1. Preheat oven to 325. Lightly coat a rimmed baking sheet with nonstick spray.
  2. Combine buckwheat groats, oats, almonds, coconut, flax seeds, brown sugar, salt and cinnamon in a large mixing bowl.

3. In a small saucepan, melt maple syrup, coconut oil, nut or seed butter and vanilla extract over medium-low heat until combined. Pour over the dry ingredients and stir until all the ingredients are well coated.

4. Spread mixture evenly onto the prepared baking sheet. Bake for 15 minutes; remove from oven and stir. Place back in the oven for 15 minutes longer.

5. Allow granola to cool completely on the baking sheet. Once cool, stir in dark chocolate chips. Store in an airtight container and enjoy for up to 1 week.

All you need:

1 1/2 cups buckwheat groats

1 1/2 cups old-fashioned oats

1 cup sliced raw almonds

1/2 cup unsweetened coconut flakes

2 tablespoons whole flax seeds

2 tablespoons brown sugar

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup pure maple syrup

1/4 cup coconut oil

2 tablespoons nut or seed butter

2 teaspoons pure vanilla extract

1/2 cup dark chocolate chips

All you do:
