4. Meanwhile, combine the mustard ingredients in a mixing bowl. Transfer to a serving dish.

1 1/2 pounds salmon, skin removed and sliced into strips
2 eggs
1 cup grated Parmesan
1 cup panko breadcrumbs

1/4 cup apricot preserves
1/2 cup Dijon mustard
2 tablespoons sambal oelek (chili paste)
