Crispy Asparagus with Lemon Garlic Dip

Spring is the perfect time to get creative with asparagus – and while roasting is always reliable, why not go a step further? These Crispy Asparagus spears are light, crunchy and totally additive, thanks to the crunchy panko breadcrumbs and nutty parmesan cheese. Best of all, they’re super simple to make. Paired with a tangy lemon-garlic sauce, they’ll be a crowd fave!

  1. Preheat oven to 400. Line a baking sheet with parchment paper or a silcone baking mat.
  2. Prepare your dredging station: flour, beaten egg and panko mixture. Dip each asparagus spear in the flour, egg and then panko. Place each spear on the prepared baking sheet and drizzle lightly with olive oil. Bake for 15 minutes, or until golden brown and crisp.

3. While the asparagus bake, combine dipping sauce ingredients in a small bowl. Transfer to a serving dish.

4. Once out of the oven, allow the asparagus to rest a few minutes before transferring to a serving platter. Serve dipping sauce alongside.

All you need:

Panko mixture –

1 cup panko breadcrumbs

1/3 cup grated parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon kosher salt

Freshly ground black pepper, to taste

1/4 teaspoon crushed red pepper flakes

1/2 cup all-purpose flour (gluten-free or regular)

2 eggs, beaten

1 bunch fresh asparagus, tough ends trimmed

Olive oil, for drizzling

Lemon Garlic Sauce –

1/2 cup mayo

Zest and juice of 1 lemon

1 teaspoon Dijon mustard

1/4 teaspoon garlic powder

1/4 teaspoon kosher salt

Freshly ground black pepper, to taste
