Corn, Peach & Avocado Salad with Chili-Lime Dressing

If summer had a flavor, this salad would be it. Sweet corn and juicy peaches bring sunshine to every bite, creamy avocado add richness, and a zesty chili-lime dressing ties it all together. It’s refreshing, colorful, and just the right balance of sweet, tangy, and a little spicy – perfect for backyard cookouts or a light weeknight meal paired with salmon or chicken.

  1. Grill corn over medium heat until lightly charred, about 10 minutes, turning occasionally. Let cool, then slice kernels off the cob. (Alternatively, you can boil or steam the corn instead.)

2. Place corn kernels, peaches, avocado, tomatoes, red onion and cilantro in a large bowl.

3. In a small bowl, whisk together olive oil, lime juice, honey, chili powder, cayenne, salt and pepper.

4. Drizzle the salad with chili-lime dressing and toss gently to combine. Serve immediately.

All you need:

2 peaches, diced

1 avocado, diced

1 cup cherry tomatoes, halved

1/4 cup finely diced red onion

2 tablespoons chopped fresh cilantro

Chili-Lime Dressing:

3 tablespoons olive oil

Juice of 1 lime

1 teaspoon honey (or agave nectar)

1/4 teaspoon chili powder

1/4 teaspoon kosher salt

Pinch cayenne pepper

Freshly ground black pepper, to taste
