Citrus Marinated Skirt Steak

 Grilling season is here! To me, nothing beats the flavor of steak when its marinated and grilled. It cooks super quickly so the meat remains nice and juicy, sealing in that yummy flavor. This marinade is low in salt and sugar, and instead contains a ton of citrus zest and juice and jalapeno for a nice kick. Serve the steak on top of leafy greens, with a side of sweet potato mash or with grilled veggies.

1. Combine marinade ingredients in a small bowl.

Place skirt steak in a ziploc bag and pour 1/2 of the marinade over.
Seal the bag and place in the fridge for at least 4 hours (preferably
overnight). Reserve the remaining marinade in a separate bowl in the fridge.

Remove steak from the fridge 30 minutes before grilling. Preheat grill
to medium-high. Cook steak for 4 minutes per side (for medium rare),
brushing with marinade as you go. 

4. Let the steak rest for 10 minutes, then slice.

Citrus Marinated Skirt Steak
Serves 2-3

All you need:
Marinade
3 tablespoons olive oil
Zest and juice of 1 orange
Zest and juice of 1 lemon
Zest and juice of 1 lime
3 garlic cloves, minced
1 jalapeno, seeded and diced
1 tablespoon reduced-sodium tamari (or soy sauce) 
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper 

1 pound skirt steak 

All you do:
1. Combine marinade ingredients in a small bowl.
