Roasted until perfectly golden and coated in a warm cinnamon-sugar blend, they’re a wholesome alternative to baked goods or pastries that will satisfy your sweet tooth. Packed with plant-based protein and fiber, this easy recipe is great for snacking, topping yogurt or oatmeal, or packing into lunchboxes.
- Position oven rack in the upper third of the oven; preheat oven to 450.
- Spread chickpeas onto a rimmed baking sheet and blot dry with a clean towel or paper towel. Bake for 10 minutes.

3. Meanwhile, combine the sugar, cinnamon and salt in a small bowl.


4. Transfer warm chickpeas to a larger mixing bowl and toss with oil and cinnamon-sugar mixture. Return chickpeas to the baking sheet and bake, stirring once, for 10-15 minutes longer, or until browned and crunchy.


5. Once out of the oven, let cool completely on the baking sheet, then enjoy!

Note: Store in a paper bag or a glass jar that is loosely covered (not airtight). This prevents moisture buildup and keeps the chickpeas crisp. Don’t refrigerate (the humidity of the fridge will soften them). They’re crispiest right after baking. If they start to lose crunch, you can pop them back in the oven at 375 for 5-8 minutes to re-crisp.

1 (15.5 ounce) can garbanzo beans, drained and rinsed
1 tablespoon sugar (I used raw cane sugar)
1 teaspoon ground cinnamon
1/8 teaspoon salt
1 tablespoon avocado oil (or olive oil)
