Chili Rubbed Turkey Tenderloin with Spicy Melon Salsa

 I’m taking advantage of as many sunny, warm grilling days as I can get. Although not a hugely popular cut of meat, the turkey tenderloin is a wonderful lean cut with tons of protein (one serving has 0.5g of fat and 28g of protein!). The spicy chili rub in the recipe is so tasty and pairs great with the sweet salsa. Serve this with a grain (like quinoa or rice) and some roasted veggies for a healthy and super simple meal that you can make any night of the week!

1. Preheat grill to medium-high.
2. Brush the tenderloins with oil. Combine the spices in a small bowl and rub over the tenderloins. Grill for 6-8 minutes per side, or until juices run clear. Let stand 10 minutes.

 

 

 

 

3. While the meat rests, combine the salsa ingredients in a bowl.

 

4. Slice the tenderloins and place on a serving platter. Spoon salsa over and serve.

Serves 4

All you need:
1 (1.25 lb.) package turkey tenderloins
2 tablespoons olive oil
2 tablespoons chili powder
2 teaspoons garlic powder
2 teaspoons minced dried onion
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon freshly cracked black pepper
Zest of 2 limes

Salsa
2 cups small diced canteloupe
1/2 small red onion, finely chopped
1 jalapeno, seeded and finely chopped
1/4 cup finely chopped cilantro
Juice of 2 limes
1/2 teaspoon salt

All you do:
