Chicken Sausage, Bell Pepper and Goat Cheese Frittata

Frittatas are a great make-ahead breakfast to enjoy all week along. This version has a combination of caramelized chicken sausage, sweet bell peppers and nutty, creamy goat cheese (a perfect flavor combination). Serve this with fresh fruit or buttered toast for a tasty and filling way to start the day!

  1. Preheat oven to 425 degrees.
  2. Warm a medium-sized oven-safe skillet (I used cast-iron) over medium-high heat. Add olive oil and chicken sausage to the pan and cook until lightly browned, about 3 minutes.

3. Add bell peppers and onion and cook until lightly softened, about 2 minutes.

4. Meanwhile, whisk eggs, cream (or milk) and salt together in a large bowl.

5. Pour the egg mixture over the sausage and veggies and remove pan from heat. Top with goat cheese and basil and transfer skillet to the oven. Bake for 25 minutes, or until the eggs are set. Once out of the oven, allow the frittata to set for at least 5 minutes before slicing.

Note: To reheat, place each slice on a microwave-safe plate and heat for 1 minute.

All you need:

1 tablespoon olive oil

2 Italian chicken sausage links, diced

1 red bell pepper, diced

1 orange bell pepper, diced

1/2 small red onion, chopped

12 large eggs

2 tablespoons heavy cream (or milk)

1/2 teaspoon kosher salt

4 ounces plain goat cheese

4 fresh basil leaves, torn

All you do:
